This simple deviled egg recipe is perfect for Lent or any occasion. I know your family and friends will love it! Plus, you can make them ahead of time—just store them in the refrigerator until you’re ready to serve.
### Here’s how to make them:
1. **Boil the Eggs:**
– Place eggs in a large pot and cover them with water (at least 1–2 inches above the eggs).
– Bring the water to a rapid boil, cover the pot, and remove it from heat. Let it sit for 10–12 minutes.
2. **Cool the Eggs:**
– Drain the hot water and refill the pot with cold water. Repeat this process a few times.
– Add 2 cups of ice to the water and let the eggs cool for 10–15 minutes.
– If you’re not ready to finish the recipe just yet, you can refrigerate the eggs (with the shells on) for a day or two.
3. **Peel the Eggs:**
– Gently crack each egg on the countertop, turning it to crack the shell all over. Carefully peel off the shell and rinse each egg.
4. **Prepare the Yolks:**
– Slice each egg in half and remove the yolks, placing them in a small mixing bowl.
– Rinse the egg whites and set them aside.
– Mash the yolks with a fork.
5. **Mix the Filling:**
– Add mayonnaise and **Maille Dijon Originale Mustard** to the mashed yolks, then mix until smooth.
– Season with salt and pepper to taste.
6. **Assemble the Deviled Eggs:**
– Rinse the egg whites one more time, if needed.
– Transfer the yolk mixture to a piping bag fitted with a star tip.
– Pipe the mixture into the egg whites and garnish with chopped chives.
