As a Vietnamese-American growing up in the U.S., rice was a huge part of my life. My mom cooked rice at least five to six times a week. Now, as an adult, I still love making all types of rice dishes—from Asian-inspired ones to recipes featuring Zatarain’s Spanish Rice Mix, Jambalaya Rice Mix, or Yellow Rice. Honestly, I love it all!

Rice has always been a staple in my home, both as a kid and now as an adult. It’s an essential part of so many meals, and we still enjoy it several times a week. One thing I love about Zatarain’s Cilantro Lime Rice is that it reheats beautifully. This entire dish works great as leftovers!

When I started collaborating with Zatarain’s, I knew I wanted to create an Asian-inspired recipe to share with you, and their Cilantro Lime Rice is the perfect complement to this dish.

Here’s how to make it:
1. Start by mincing some garlic.
2. Zest a lime using a grater and then juice it right into a resealable bag for marinating the chicken.
3. Add your spices, sesame oil, and low-sodium soy sauce to the bag. Seal it and refrigerate for just 10 minutes to marinate.

Next, heat a nonstick skillet and sear the chicken briefly. It won’t cook fully here—it’ll finish in the oven. Once the chicken is seared, wipe the pan clean, boil some water, and add Zatarain’s Cilantro Lime Rice to the pan. Cover, reduce the heat, and let it simmer for 15 minutes.

At this point, the rice will be almost cooked, but not quite done. Place the chicken on top of the rice, cover the pan with foil, and transfer it to the oven to finish cooking.

I absolutely love that this entire meal comes together in just one pot. It makes cleanup so much easier and is perfect for busy weeknights. The rice is bursting with flavor, and the chicken is tender with the perfect balance of soy sauce and lime juice. It’s quickly become a favorite in our house, and I know it will be in yours too!
