We absolutely adore BBQ chicken! We’re creatures of habit, so we often prepare BBQ grilled chicken, serving it with fries and a veggie side, like corn or grilled vegetables. The grilled chicken must be boneless and skinless because Curtis isn’t a fan of bones. I know many people can relate to his preference, so sometimes I just accommodate it. However, when cooking a whole chicken in a slow cooker or during Thanksgiving with turkey, he has to adjust… Well, technically, I carve both the chicken and turkey, so maybe not.
This particular recipe came about—by accident. Curtis brought home an excess of chicken for our BBQ grill, and after preparing all of it, we found ourselves with leftovers. We were planning to make grilled cheese sandwiches (we’re seriously obsessed with them), and Curtis suggested mixing the chicken in. The result was spectacular, and it’s now a staple in our rotation.
We love using McCormick Grill Mates for this recipe. You can grill the chicken indoors using a grill pan, but just be careful not to set the heat too high to avoid burning the BBQ sauce.
The combination of cheesy, gooey goodness with BBQ-flavored chicken is just perfect. I prefer pairing them with fries, while Curtis opts for potato chips.
These BBQ chicken grilled cheese sandwiches are incredibly delicious—they’re irresistible! I initially planned to capture a photo with a bite taken out, but once I started eating, I couldn’t stop until it was all gone. Needless to say, there were no photos because there was nothing left to capture!
