Grilled Cheese Sandwiches with BBQ Chicken

We’re absolutely in love with BBQ chicken. Being creatures of habit, we often grill BBQ chicken and serve it with fries, plus a side of veggies like corn or grilled vegetables. It’s a must for us to use boneless, skinless chicken breasts for this dish because Curtis doesn’t handle bones well. I know many people share his preference, and in some cases, I just go with it. However, when it comes to dishes like whole chicken in a slow cooker or festive turkey, he has to manage—or rather, I end up carving.

This recipe actually came about by accident. Curtis brought home more chicken than needed for our BBQ, so I cooked it all. We were planning to have grilled cheese sandwiches (I’ve probably never mentioned how obsessed we are with them), and Curtis suggested adding the leftover chicken. The result was fantastic and instantly became a staple in our meal rotation.

We love using McCormick Grill Mates with this recipe. You can grill the chicken outside or on a grill pan indoors—just ensure it’s not too hot, or the BBQ sauce might burn!

These sandwiches are cheesy, gooey, and packed with BBQ flavor—simply perfect. I enjoy them with fries, while Curtis prefers potato chips. The BBQ chicken grilled cheese sandwiches are incredibly irresistible. I once planned to take a photo after biting into one, but I couldn’t stop myself from finishing it. By the time I was done, there was nothing left to capture for photos!
