During my visit to Henry’s Tavern in Portland, Oregon, I savored their Gorgonzola Fries, which inspired me to create my own version at home. I recently mentioned these fries in a post about the top five Portland eats, and someone requested the recipe. While I wasn’t aiming to replicate Henry’s fries exactly, I believe my rendition is quite close.
You know how much I adore brown butter, right? Let’s dive into that. The rich, nutty brown butter gorgonzola sauce takes just a few minutes to prepare. Start by browning butter—simply melt it until it develops a slight nutty aroma, but be cautious not to let it burn!
To ensure the sauce remains smooth, I combined heavy cream with 2% milk. The addition of gorgonzola, ground sage, and a touch of cayenne makes for a perfect harmony of flavors. These fries are sure to be a hit!
