I decided to try something different by using gnocchi instead of pasta. I browned some butter and added kale and corn for a unique, more sophisticated twist—and it’s incredible! Your friends will be so impressed when you make this for them, and it’s super easy to prepare. Isn’t that great?
First, bring a pot of water to a boil for the gnocchi. Prepare the kale by removing the leaves from the stems and cutting them into bite-sized pieces. Gather all your ingredients, including the Roth Cheese Mac and Cheese blend. Melt the butter over medium heat and let it cook for about 3 to 4 minutes until it’s browned. Can you see those brown specks?
Add flour to make a roux, then whisk in the milk. Season with salt, pepper, and other spices. Add the cheese and stir until it melts. Then, add the kale and corn to brighten and balance the dish. This mac & cheese is fantastic on its own or as a side dish with an entree. It will truly impress your friends—mine loved it!
