Chicken Nachos on a Sheet Pan

I’ve been a big fan of Cabot Cheese, and I’m excited to partner with them this year to create a few recipes to share with you!

Let me start by saying I’m all about one-pan or one-pot cooking. They’re my go-to for easy meals! I’ve been wanting to create a chicken nachos recipe for ages, and now it’s here! This dish is a one-sheet pan wonder. You just bake the chicken, then add tortilla chips and melt Cabot cheese on top—simple as that. Plus, it only takes 45 minutes from start to finish!

The cheesy flavor in this is incredible!

Speaking of cheese, I used several types of Cabot cheese for this recipe. Fun fact: all Cabot Cheddars are naturally lactose-free, which is perfect for me as I’ve become more lactose intolerant. I love that I can still enjoy Cabot Cheddar cheese!

For the nachos, I grated half of each cheese block. You could even use leftover chicken from a slow-cooker whole chicken recipe. I used half a pound of tenderloins, which bake perfectly in the oven with a little olive oil and taco seasoning.

Once baked, they’re so delicious! I chop them up right on the sheet pan, then add tortilla chips, chicken, black beans, and cheese. It’s that easy, and the result is cheesy perfection! This has quickly become a favorite for snacking or even a quick lunch. It’s absolutely delicious!
