Last year, Curtis asked me to make peanut butter cookie cups, and since then, he also suggested chocolate chip cookie cups. I finally gave them a try a few months ago, shared them with friends, and they were a huge hit! I’m thrilled to share the recipe with you.
We’re talking about chocolate chip cookie cups topped with frosting or icing, whichever you prefer to call it. Of course, I couldn’t resist adding a touch of unicorn frosting. What do you think?
Let’s begin with the flour—my favorite for baking. I like to start by mixing all the dry ingredients first. Then, I cream together both sugars with the butter, followed by adding vanilla extract and an egg. Gradually incorporate the flour mixture in two batches, being careful not to overmix. Next, stir in miniature chocolate chips; they suit these small cookie cups perfectly.
Prepare your nonstick muffin pan by giving it a light spray. Use a cookie scoop to fill the muffin cups with uniform portions of dough. There’s no need to flatten them—they bake into perfect little domes, just right for icing!
For the frosting, beat the butter in your stand mixer, then add the powdered sugar in batches, not all at once. Once combined, slowly add the milk, a tablespoon at a time, and mix for 5 to 6 minutes until smooth. Divide the frosting into bowls to create your desired colors—aren’t they pretty? Set up your piping bags by placing them in cups for easy filling. Using an angled spatula, load the frosting into the bags, secure with a rubber band, and snip the ends.
Place the smaller frosting bags into a large piping bag with your chosen tip. I found that three colors fit nicely, though I had hoped for four!
Your chocolate chip cookie cups are now ready to frost. It takes a little practice to get the right pressure on the piping bag for an even icing design, but you’ll get the hang of it.
