Chocolate Chip Granola Cups with Yogurt Parfait

Not long ago, Princess Cruises invited us on an unforgettable Alaskan cruise. The experience was truly remarkable. On my first excursion, I couldn’t help but tell our tour guide everything felt like living inside a postcard. It was incredible—both the breathtaking scenery and the delightful food we enjoyed.

One of our adventures included the White Pass Scenic Railway in Skagway. The views were spectacular! We chose the luxury class car, and it was well worth it, with super comfy seating and a selection of drinks served. I had a root beer that was truly amazing—I’m quite obsessed with root beer!

The original ones didn’t include chocolate chips, but I decided to add them for extra sweetness and some chocolatey goodness. To measure honey or other syrupy ingredients, I always coat my measuring cup with nonstick baking spray. Whisk together the wet ingredients and combine all the dry ones.

Mix thoroughly to ensure everything is evenly distributed, then add the wet ingredients. I sprayed the back of my spoon and used it to shape the granola into cups. Once everything is ready, it’s time to bake them.

Here’s how they look after baking in a regular-sized muffin tin. This creative way to serve yogurt is perfect for your next brunch with family and friends. You can even prep them ahead of time and store them in the fridge for breakfast during the week. The fruit paired with lavender honey adds a touch of elegance.
