One-Pan Chicken Meal

I’m thrilled to share this recipe with you! I have to admit, I’ve already made it several times, and I can tell it’s going to become a staple in our weeknight dinner rotation. I’ve been wanting to try a sheet pan meal ever since I started seeing them all over Pinterest.

When my friend Mary’s new cookbook, *The Weeknight Dinner Cookbook*, arrived in the mail, I was flipping through it and immediately knew I had to make her sheet pan chicken dinner.

Her cookbook is fantastic and filled with amazing dinner ideas—so many, in fact, that I can’t wait to try them all! Some recipes I’ve bookmarked include Mediterranean Nachos, Sweet & Spicy Salmon with Broccoli, Cheesy Mexican Pasta, Creamy Balsamic Skillet Chicken, Greek Chicken, and Cajun Roasted Potatoes.

This sheet pan chicken dinner is so simple to prepare—it only takes a few minutes to get everything ready. I didn’t have dried basil on hand, so I used fresh basil from my garden instead (about 1/4 to 1/3 cup packed before chopping). The fresh herbs add so much flavor to the dish!

Here’s how it comes together:
– Mix the olive oil with herbs, salt, pepper, garlic, and lemon juice.
– Toss this mixture over the veggies and chicken.
– Roast everything for 50 minutes, and voila—you’ve got a delicious, flavorful meal that’s incredibly easy to make!

I absolutely love the combination of veggies in this dish, and the flavors are out of this world. It’s hard to beat a recipe that’s both simple and satisfying!
