Shrimp BLT Flatbreads

I’m all about quick and easy meals during the week—they’re lifesavers! But on weekends, when I have more time, I genuinely enjoy taking my time in the kitchen and perfecting a dish. There’s nothing quite like the satisfaction of creating a meal from scratch.

That said, today’s recipe is all about simplicity! This BLT (bacon, lettuce, and tomato) shrimp flatbread is incredibly easy to make and so delicious!

Recently, I had the chance to sail with Princess Cruises on a trip to the Mexican Riviera, and it was absolutely amazing. I was lucky enough to bring my friend Nancie along, and we had such a blast! Here’s a shot of the Port of Los Angeles as we set sail for Mexico.

The food on the cruise was incredible—both on board and at the ports we visited. I came back inspired to whip up some shrimp recipes to share with you!

To make these flatbreads, I started by cooking the bacon and leaving a little bacon fat in the skillet to cook the shrimp. It’s not a strict recipe—I just added a splash of vinegar and olive oil, plus some salt and pepper to season.

The result? A snack or dinner that’s super flavorful and incredibly easy to put together. I know you’re going to love it!
